Short ode to Swedish Princess cake

20 some years ago when I was first living in San Francisco I went to Green Apple books which was a de rigueur for wanna be writers such as me. Across the street from the infamous bookstore was an icon of a bakery Schuberts which has been in San Francisco since 1911. There I discovered Swedish Princess cake one of my all time favorite desserts. Princess cake top layer is marzipan, then wipped cream, sponge cake, raspberry jam, vanilla cream and finished with sponge cake. So yummy!!

I was thrilled to find Petaluma Market sold whole Princess cakes and pieces and have introduced many people to the delight that is princess cake since moving to Petaluma. Then last week- just in time for my birthday I saw this beautiful yellow princess cake with a chocolate nest on top at Costeaux Bakery They did one in peach/pink for my birthday. According to one of my friends “I don’t even like cake but this is the best cake I’ve ever had.” High praise indeed! If you have not tried Princess cake may I suggest you get a piece from Costeaux or Petaluma Market…you can thank me later!
